Pokemon Sun and Moon - Eevee Evolutions

Take note there are no new evolutions for Eevee in Pokémon Sun and Moon, but the required materials and conditions to evolve it have been changed a bit.

Jolteon

Eevee turns into Jolteon when you give it a special stone called Thunder Stone.
To get one, head to the back of the caravan found at the Fossil Restoration Center in Route 8. Alternatively, you can get one by playing minigames at Poké Pelago or buy one in Konikoni City for 3,000 credits.

Vaporeon

Put simply, you're going to need to expose Eevee to a Water Stone to get a Vaporeon.
As for where you can nab the special stone, you can find it in Route 8 in the water south of the small island, or you can just buy one in Konikoni City for 3,000 credits or win some via Poké Pelago.

Flareon

Just like the others, Eevee needs a special stone to evolve into Flareon, and this time around, it's a Fire Stone.

Espeon

Unlike the first-generation evolutions of Eevee — Jolteon, Vaporeon and Flareon — Espeon is a bit trickier to get.
First off, you're going to have to raise Eevee's friendship level to at least 220 by having it hold a Soothe Bell, giving it various Berries and vitamins and winning a lot of battles without it fainting.
However, there's a trick to increase your Pokémon's happiness quickly. The gist of it is that you need to get two TM items that Eevee can learn and repeatedly teach it the same moves over and over again, as it becomes happier each time it learns one.
After that, make it gain a level during daytime, and it should evolve into Espeon.

Umbreon

You just have to follow the same steps on how to get Espeon to make Eevee evolve into Umbreon, but this time, you have to raise its level at night.

Sylveon

To start things off, get Eevee to learn a Fairy type move. Next, head to Pokémon Refresh via the menu and earn two hearts by feeding it Poké Beans and petting it.
When everything's all set up, it'll evolve into Sylveon when it levels up.

Leafeon

To point out the obvious, have Eevee in your party and go to Lush Jungle near Route 8.
There, look for the big rock that will prompt this message when you interact with it: "The surface is covered with moss. It feels soft to the touch."
All that's left to do now is to keep on battling the Pokémon in the area until Eevee evolves into Leafeon.

Glaceon

To get Glaceon, you're going to follow basically the same instructions with Leafeon's evolution, but instead of a large mossy rock, you're going to need an icy one.
That said, just head on over to the Pokémon League and go inside the mountain to find it. To make sure you got the right one, it should say this when you interact with it: "It's a rock that is covered in ice. Touching it seems likely to freeze you solid!"
As everyone may have figured out by now, just battle with the Pokémon there until Eevee evolves.

Where to Catch EEvEE?

If you're reading this short guide, then you probably already have an Eevee, but for those who don't have one yet, you can catch it on Akala Island, the second island you'll arrive at in your adventure.
As to where Eevee exactly is, you can encounter one in Route 4, near Heahea City
